In many Southern homes a New Year’s Tradition is to eat black eyed peas and some form of greens. Eating these items on New Year’s Day is thought to supply you with good luck, wealth and health for the New Year! We are not usually a superstitious family (I think it is just a good excuse to eat black eyed peas and greens)!
This year I decided to change it up a bit and create a Black Eyed Pea Salsa! It is a quick, easy and delicious appetizer or side dish!
